White Chocolate Triple Cream Pops

– 3 7-ounce rounds Real California Triple Cream cheese – About 1 1/2 pounds white chocolate, chopped, or white chocolate wafers or chips – Zest from 1 1/2 oranges Special equipment: 4- to 5-inch lollipop sticks :Triple Cream, Mt. Tam

Prep time: About 15 minutes, plus time to freeze cheese

Cook time: About 45 minutes

Cut each cheese in half into two rounds. Cut each round into 8 wedges. Insert a lollipop stick into the curved edge of each wedge and arrange wedges on a parchment- or silicone-lined baking sheet, rind side down. Freeze for at least 30 minutes.

In a medium bowl set over a medium saucepan of boiling water or in a double boiler, melt chocolate. Remove from the heat. Dip one cheese wedge in chocolate, letting excess drip back into bowl, then return to baking sheet and immediately sprinkle with some zest. Repeat with remaining cheese, chocolate, and zest, rewarming chocolate as needed. Refrigerate until ready to serve.
