Preheat oven to 400 degrees Fahrenheit.
Cut tortillas into triangle shapes.
Add vegetable oil to a large frying pan over a medium high flame. Allow oil to get hot (350 degrees Fahrenheit). Once hot add a few tortilla triangles at a time and fry on both sides until hard and crisp about 2 minutes per batch. Remove chips from oil and drain on a paper towel lined plate. Salt to your liking. Fry remaining tortilla triangles and set aside.
Season flank steak with 1 teaspoon salt, pepper, and lime juice for 1 hour prior to cooking. Heat grill to 450 degrees and spray with non-stick oil. Place flank steak on grill and cook 4 minutes on each side. Remove from grill and allow to rest for 5 minutes before cutting into cubes. Set to the side.
Layer a large baking sheet with 3/4 of tortilla chips, beans, salsa, white onion, 1/2 of the chopped carne asada, jalapeños and 2 cups Queso Quesadilla.
Add remaining chips to the top, then sprinkle with the last cups of both Queso Quesadilla and Cheddar cheese. Place remaining carne asada at the center.
Place in oven for 8 to 10 minutes or under the broiler on high for 5 minutes (or until cheese has completely melted).
Top with Queso Fresco, Crema Mexicana, cilantro, tomato, and guacamole. Serve immediately.
