Avocado Caprese with Creamy Balsamic Dressing

Ingredients:

– 1/4 cup Real California plain yogurt – 2 tablespoons olive oil – 2 teaspoons balsamic vinegar – Salt and pepper – 2 tomatoes, cut into small wedges or chunks – 1 8-ounce container fresh Real California Mozzarella (small balls called ciliegine), drained – 1 1/2 avocados, peeled, pitted, and sliced – About 1/2 cup loosely packed fresh basil leaves

Directions:

Prep time: 15 minutes

In a small bowl, combine yogurt, oil, vinegar, and salt and pepper to taste. Set aside.

Arrange tomatoes on plates or platter. Top with mozzarella, avocados, and basil. Drizzle with yogurt mixture and serve. Serves 4.

Note: If you’d prefer to use your own dressing, omit the first 4 ingredients and skip the first step of the directions.
